Schiacciata con l'olio
(Flat bread with oil)

 
Prepare the dough following the recipe for basic bread dough. Roll out fairly flat (about 2cm) to make either one large or two smaller oblong-shaped schiacciate. Put in a baking tray lightly dusted with flour and make dimples about six centimetres apart by pressing your finger well down into the dough. Sprinkle with plenty of salt and drizzle the surface with olive oil. Bake in an oven pre-heated to 200°C. for 15 minutes.
 
Schiacciata is often flavoured with slices of tomato or courgettes, with rosemary or any other fresh herb. Simply top the dough with the herbs or chopped vegetables before putting it into the oven.
